What better way to celebrate Mothers Day than a chewy brownie! If you don't feel like making them pop down to our cafe at the BTC in Stevenage for this and other freshly made treats!

  • 225g butter, melted
  • 400g of brown sugar (or more depending on your taste)
  • 1 tablespoon vanilla extract
  • 4 eggs
  • 225g plain flour
  • 140g unsweetened cocoa powder
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 125g Chocolate 70% cocoa (or more if you like them dark and very chocolatey!) - chopped up as small as you can.

To Prepare

  1. First, preheat the oven to 180 C / Gas 4. Lightly grease and flour a 23x30 rectangular baking tray .
  2. Beat the butter, sugar and vanilla until white and fluffy (you can use an electric mixer). Add eggs one at a time and continue mixing.
  3. Sift the flour, cocoa, salt and baking powder and add it to the mixture.
  4. Beat slowly until the flour and butter mixtures are incorporated, then add the chopped up chocolcate to the mix and beat slowly again.
  5. Pour the misture into the baking tin and bake for 20 minutes or until a skewer poked into the centre comes out clean. If there's some chocolate on the skewer that's probably the melted chocolate bits not the batter, but if alot then continue baking.
  6. Let it cool. Resist the temptation to eat them all right away! The brownied will be a bit crumbly if you eat it right away if you let it cool it will be lovely and chewy not crumbly!.

Serve on a plate and enjoy!
