For our Festive Cupcakes you will need...

85g Soft butter

85g soft brown sugar

2 eggs

85g plain flour

½ tsp baking powder

2 tsp mixed spice

240g mixed fruit

25g mixed peel – optional

25g glace cherries – optional

Method

  • Preheat oven to 170C/Gas Mark 3
  • Cream the sugar and butter in a large bowl until light and creamy
  • Add one egg at a time to the mixture, beating well
  • Add all other ingredients and mix thoroughly
  • Put into cupcake cases
  • Bake in over for 20 to 30min until golden and firm to touch
  • Once the cupcakes have cooled, melt some apricot jam in the microwave and brush over the tops of the cakes
  • Roll out the white icing and marzipan if using and cut into circles place either a layer of marzipan or just the icing on the top of the cupcake (if using marzipan you will need to brush the marzipan with jam to ensure icing then sticks to it
  • Roll out the green icing and cut into Christmas tree shapes
  • Put jam on the back of the tress and place on top of the white icing

You now have lovely Christmas cupcakes to share with your friends – yum!
