For these cookies you will need...

12oz plain flour

1tsp bicarbonate of soda

1 tbsp ground ginger

1 tsp mixed spice

½ tsp ground cinnamon

4 ½oz butter

6oz light brown or muscovado sugar

1 egg

4 tbsp golden syrup


  • Put flour, spices and bicarbonate of soda in a bowl
  • Rub in the butter until you have a breadcrumb consistency
  • Stir in the sugar
  • Beat egg and golden syrup together
  • Add this to the breadcrumb mixture
  • Stir well until combined. You will have a soft dough (which is super yummy)
  • Knead the dough until smooth, wrap in clingfilm and place in the fridge for at least 20 minutes
  • Preheat oven to 180C/350F/Gas mark 4, cover baking trays with grease proof paper
  • Roll out dough on lightly a floured surface. Your cookies should be 0.5cm in thickness
  • Cut out whatever shapes you like and put them on your baking tray
  • Bake for 10-15 minutes until gold brown
  • Cool for 20 minutes before icing
  • Decorate!
