For these you will need...

350g milk chocolate
50g dark chocolate
130g butter
4 tbsp Golden Syrup
2 handfuls mini marshmallows
2 handful raisins
100g digestive biscuits (crushed)
2 handful rice crispies
(for crunch!)
Icing sugar (for dusting)

METHOD

  • Line a cake tin with foil (I use a 28cmx22cm tin)
  • Put 300g milk chocolate, 120g butter and 3 tbsp of golden syrup in a bowl
  • Place the bowl in the microwave for around 2 minutes until chocolate has melted. Ensure you stir the mixture every 30 seconds to avoid the chocolate separating
  • Once melted place the marshmallows, raisins, digestives and rice crispies in the mixture and stir thoroughly. You can change the balance of what you put in the mixture depending on taste
  • Put the mixture in the lined tin and flatten
  • Place the remaining milk chocolate, butter, dark chocolate and 1 tbsp of golden syrup in a bowl
  • Place bowl in microwave for around a minute until the chocolate has all melted.
  • Smooth this over the top of the rocky road mixture in the tin to give a lovely chocolate top layer
  • Place in fridge for at least an hour
  • Once hard, sprinkle icing sugar over the top and cut into squares.
